BREADS AND ROLLS

Entire Wheat Roll

1 quart lukewarm water or vegetable water (from steaming),
2 tablespoons vegetable or olive oil
2 tablespoons raw sugar or honey, 2 teaspoons salt
1 cake  (packet) yeast, Whole wheat flour

Add sugar or honey, salt, and oil to the water. Crumble yeast on mixture. Add enough flour to make a stiff dough. Knead until smooth and set to rise in a deep, oiled pan. When dough rises to double its bulk, knead until smooth, and set to rise again. Shape into loaves and let rise in oiled bread pans. Light the oven, full, for five minutes. Put the bread in for ten minutes, or until it begins to brown. Turn the fire down to a bead and leave for the rest of the hour. Remove from pan when done and cool before putting in bread box. Bake at least one hour.

Whole Wheat Bread

2 cups scalded milk (soy),  1 yeast cake or packet
1/4 cup raw sugar or less of honey,    4 2/3 cups coarse whole-wheat flour

Dissolve yeast cake in 1/4 cup lukewarm water. Add sugar or honey to scalded soy milk; when lukewarm, add yeast and flour. Beat well, cover, and let rise until it is double in size. Beat again, and fill buttered or oiled bread pans one-half full. Let rise to not quite double its size this time. Bake in hot oven, then turn fire very low. Remove from pans when done. Let stand on side until cool.

“Health Food” Date Bread

1 cup warm wheat porridge, 1/4 yeast cake
1/4 cup raw sugar,  2 1/4 cups whole wheat flour
1 tablespoon oil,  2/3 cup chopped nut-meats
2/3 cup chopped dates

Mix porridge, sugar, and oil. Add yeast cake, dissolve in lukewarm water and flour. Knead, cover, and let rise over night. In the morning, add nuts, and dates. Shape into a loaf. Let rise in pan and bake 50 minutes in a moderate oven. Oiled muffin tins may also be used.

Raisin Bread

4 cups whole wheat flour,  2 pounds washed raisins
1 cup raw sugar,  3 cups grated carrots
6 teaspoons baking powder, 1 cup olive oil
1 teaspoon salt, 4 cups hot water
2/3 teaspoon cinnamon

Mix and sift dry ingredients, add carrots. raisins, oil, and hot water. Pour in pan, place in hot oven and turn down heat. Bake very slowly, one hour.

Nut Bread

1 1/2 cups whole wheat flour,  1 cup chopped walnuts
1/2 cup yellow corn meal, 1 pint soy-bean milk
2 cups graham flour,  2 teaspoons soda
1/2 cup molasses,  1 teaspoon salt
1/2 cup raw sugar, 4 teaspoons baking powder
1/2 cup oil

Mix sugar oil. molasses, soy milk. Stir dry ingredients together and add to wet mixture. Bake in slow oven about 1 1/2 hours.

Whole Wheat Biscuits

3 cups whole wheat flour,  1 teaspoon raw sugar
4 teaspoons baking powder, 1/4 cup vegetable oil
1 teaspoon salt, 1 cup water or milk (soy)

Sift dry ingredients twice. cut in oil. and add liquid. Roll to 1/2 inch thick, Cut with biscuit cutter Bake in hot oven about 25 minutes.

Orange Corn Bread

1 cup yellow whole corn meal (not too finely ground),
1 1/2 cups soy bean milk or water,
2 tablespoons vegetable or olive oil,
1 cup whole wheat flour,
4 teaspoons baking powder, Grated rind of 1 orange,
Pinch salt

Mix well and beat. Pour into an oiled shallow pan. Bake in hot oven 25 minutes.

Whole Wheat Almond Rolls

1 cup ground whole wheat flour,  1/2 cup water (enough to make a stiff dough)
1/2 cup freshly-ground almond meal, Salt to taste

Knead all ingredients together for 10 minutes. Form into rolls 3/4 inch thick and about 2 inches long. Bake in well-oiled tins, in a moderate oven, for 45 minutes.

Ice Box Rolls

1 cup mashed potatoes, 2 1/2 teaspoons salt
1 1/2 cups potato water, 1 yeast cake (packet)
2/3 cup vegetable oil, 6 to 8 cups whole wheat flour
2/3 cup raw sugar

Mix potatoes, liquid, sugar, yeast. salt, and 1/2 the flour. Beat well. Add rest of the flour to make a soft dough. Let rise once. Shape and bake. This dough can be kept in the ice box and used as needed. Set in a warm place to rise after molding into rolls. then bake.

Whole Wheat Waffles

2 cups whole wheat flour, 1 teaspoon honey
1 1/2 cups water , 6 tablespoons vegetable or
2 1/2 teaspoons baking  powder, olive oil

Sift flour and measure. Add baking powder, salt, and
sift again. Combine the water and oil. Add gradually to
the dry mixture. Cook in hot, oiled waffle irons.

Whole Wheat Dumplings

1 cup whole wheat flour, 1/2 teaspoon salt
1 1/2 teaspoons baking powder, 1 teaspoon vegetable oil
Cold water

Sift dry ingredients. Cut in shortening. Add enough water to form soft dough. Drop by spoonfuls into stew.
